The Vision Behind Mission Ceviche

Chef José Luis Chávez is the founder and creative force behind Mission Ceviche, redefining contemporary Peruvian cuisine in New York City. Born in the Andes of Venezuela to Colombian and Peruvian parents, his cooking is shaped by a life lived between cultures and a deep connection to Peru's coast, Amazon, and highlands.

Chef José Luis Chávez

Trained in Peru and inspired by its markets, traditions, and global influences, José Luis defines his style as New Peruvian Cuisine—a balance of heritage and innovation, where bold flavors, pristine seafood, and modern technique come together with purpose.
